INGREDIENTS

1 kg of Villa Germânia Prime Rib of Duroc Pork

Salt and black pepper to taste

1 teaspoon smoked paprika

1 teaspoon cumin powder

1 teaspoon coriander powder

Olive oil

Butter

2 squeezed garlic cloves

Chopped thyme

2 potatoes, diced

1 hard-boiled egg

1 tablespoon capers

¼ cup milk

¼ cup olive oil

Pepper

Sicilian lemon juice


PREPARATION METHOD

Mix salt, pepper, paprika, cumin and coriander. Season the Prime Rib with this mixture. Bake covered in aluminum foil at 160°C for 1 hour.

Grill in a hot frying pan with olive oil. Add butter, garlic and thyme. Grill until golden brown, basting with the flavored butter.

Cook the potatoes in salted water until tender. Drain. Mix the potatoes with the grated egg, capers, milk, olive oil and season with salt, pepper and lemon juice. Blend until it forms a mayonnaise. Refrigerate.

Place the potato mayonnaise on the plate. Slice the Prime Rib and place on top of the mayonnaise. Finish with the butter from the frying pan on top.
