QUAIL WITH BACON AND QUINOA SALAD

INGREDIENTS

4 QUAILS

• 8 slices of bacon

• 1 cup quinoa

• 2 cups water

• 1 cup cherry tomatoes, halved

• 1 small cucumber, peeled and diced

• 1/2 red onion, chopped

• juice of 1 lemon

• olive oil

• salt and pepper to taste

PREPARATION METHOD

Preheat the oven to 200°C (392°F). Season the quails with salt and pepper. Wrap each quail with 2 slices of bacon. Place the quails in a baking dish and bake for about 30 minutes or until they are golden and fully cooked. While the quails are roasting, prepare the quinoa salad. In a saucepan, combine the quinoa and water.

Cook over medium heat for about 15 minutes or until the quinoa is tender and has absorbed all the water. Set aside and let cool. In a bowl, mix the cooked quinoa, cherry tomatoes, cucumber, and red onion. Dress the salad with lemon juice, olive oil, salt, and pepper to taste. Mix well. Serve the quails with the quinoa salad and enjoy!
