INGREDIENTS

Mint sauce

1 chopped garlic clove

juice of half a lemon

2 cups mint leaves

½ teaspoon honey

Salt and pepper to taste

About half a cup of olive oil


Green mayonnaise

Juice of one large lemon

200 ml cold milk

1-2 cloves of garlic

Salt to taste

300 to 400 ml oil

½ cup chopped green smell


Chimichurri

1 tablespoon dehydrated garlic

1 tablespoon dried onion

1/2 tablespoon Calabrian pepper

1/2 tablespoon oregano

1/2 tablespoon dried parsley

fresh chives to taste (I used 1 tablespoon)

100ml olive oil

50ml vinegar


PREPARATION METHOD

Mint sauce

Add all the ingredients in a mortar and pestle or in a food processor, in both cases add olive oil little by little.


Green mayonnaise

Place the milk, lemon, salt and garlic in the blender jug and blend until the garlic clove is crushed.

Turn the blender down to the lowest speed and, with the lid open, continuously pour in the oil.

Note that the sauce will gradually thicken; when it reaches the texture of mayonnaise, stop blending.

Once it has reached a creamy consistency, add the green peppercorns and blend very briefly, just to color the sauce and leave a few pieces to garnish it.


Chimichurri

In a bowl, add the garlic, onion, pepper, bay leaf, oregano, parsley and chives. Mix and add the oil and vinegar. Mix again until the ingredients are well combined. Leave the sauce to rest for at least 30 minutes before serving.
