DUCK IN CACHAÇA

INGREDIENTS

1 medium duck weighing 2 kilos

• 5 tablespoons of oil

• 3 chopped onions

• 4 cloves of garlic

• 3 tomatoes

• 2 purple basil leaves

• half a liter of dry white wine

• 1 shot of cachaça

• 1 shot of cognac

• 1 glass of black beer

• juice of two oranges

• juice of two lemons

• chopped parsley to taste

PREPARATION METHOD

The first step is to heat the oil. Add the duck and let it fry for about 30 minutes. Once the duck is fried, it's time to add the other ingredients. Onion and garlic. Another 10 minutes on the heat and then the tomatoes. When the sauce starts to boil, add the wine. Then cognac and cachaça. These drinks will tenderize the meat and give it a special flavour. Cover the duck with boiling water and put the lid on so the meat can cook in the sauce for about 20 minutes.

Meanwhile, season the sauce a little more with purple basil, orange juice and lemon juice. And finally the black beer. Garnish the dish with chopped parsley to taste. The suggestion is to serve the 'drunk' duck with a traditional polenta.
