ROAST DUCK WITH HERBS

INGREDIENTS

1 whole duck 

• 3 lemons

• 1 cup white wine;

• salt to taste;

• 1 cup tomato sauce;

• ½ teaspoon Calabrian pepper;

• ½ teaspoon black pepper;

• 3 cloves of garlic;

• 1 cup fresh tomatoes;

• 1 onion;

• 1 portion of basil;

• 1 portion of rosemary.


PREPARATION METHOD

First, the duck should be cleaned with the lemon.  To season it, mix the white wine, salt, tomato sauce, Calabrian pepper, black pepper, garlic, fresh tomatoes and onion in a blender. Then add the basil and rosemary. Then whisk the mixture together and the sauce is ready.

Season the duck and spread it with the sauce. Then cover the duck with aluminum foil and put it in the oven to steam. The dish should stay in the oven for four hours.
