DUCK BURGER WITH TRUFFLE MAYONNAISE

INGREDIENTS

800 grams of ground duck breast

• 200 grams of ground duck fat

• ½ onion

• 1 clove of garlic

• Salt, pepper and parsley to taste

• 4 ciabatta or hamburger buns

• 4 slices of mozzarella cheese

• 2 sliced tomatoes

• 8 lettuce leaves


Truffle mayonnaise

• 1 egg yolk

• 1 dessert spoon Dijon mustard

• 1 dessert spoon vinegar

• 1 pinch salt

• 1 teaspoon Worcestershire sauce

• 6 drops Tabasco

• Chopped green onion and salt to taste

• 1 tablespoon of crema tartufata (a type of mushroom paste with a truffle aroma)

• 250 milliliters of sunflower oil

PREPARATION METHOD

Hamburger

In a food processor, grind the duck meat, fat, onion, garlic, salt, black pepper and parsley. Repeat the procedure. Set aside.


Truffle mayonnaise

Combine all the ingredients in a blender, except the oil. Let it blend for about 20 seconds and only then add the oil, slowly drizzling it in until the mixture reaches the consistency of mayonnaise. Set aside.


Assembling

Separate the raw meat into four parts. Shape the dough with the help of a special homemade hamburger press or a metal hoop, using a spoon to knead. Each burger should be almost two fingers thick. When serving, grill the meat to the desired degree in a frying pan without oil or butter. The duck's own fat, which is released during the process, helps. Finally, place a slice of cheese on each burger, followed by two slices of tomato and two leaves of lettuce between the two halves of a bun cut in half.


Tip: it can be a little difficult to find “crema tartufata”. If you prefer, an alternative is to use the same amount (1 tablespoon) of truffle oil.
