DUCK CROQUETAS WITH BURNT ONION JAM

INGREDIENTS

Duck thigh and drumstick 2 pieces

• Onion matignon 1 piece

• Carrot in matignon 1 piece

• Parsley in matignon 1 stalk

• Poultry or vegetable stock 600 ml

• Duck fat 80 grams

• Wheat flour 100 grams

• Whole milk 400 ml

• Garlic chopped 2 pieces

• Onion brunoise 1 unit

• Grated nutmeg Qb

• Ground pepper Qb

• Salt Qb


For the breading and finishing:

• Wheat flour 80 grams

• Beaten eggs 2 units

• Panko flour 100 grams

• Frying oil 1 L


For the onion jam:

• Red onion julienne 4 pieces

• EVO olive oil Qb

• Dry red wine 120 ml

• Red wine vinegar Qb

• Ground pepper Qb

• Refined sugar 40 grams


PREPARATION METHOD

For the croquetas: Put the thighs and drumsticks together with the onion, carrot and celery cut into matignons in a casserole dish. Cover with poultry or vegetable stock and simmer for about 2 hours. When tender, shred well and reserve the cooking stock.

In another saucepan, melt the duck fat and add the onion in brunoise and then the garlic. Sauté well and add the flour. Cook the flour until light roux. Gradually add the liquid from cooking the meat, alternating with the milk. Cook until the mixture comes away easily from the bottom of the pan and, when ready, add the shredded duck meat. Season with grated nutmeg, salt and ground black pepper. Transfer the croquetas to another bowl and refrigerate for at least 2 hours.

When cold, roll out the dough and bread it first in wheat flour, beaten eggs and then panko flour. Deep fry at 180C until golden brown. Serve with the burnt onion jam.

For the onion jam: Use a mandoline to slice the onions into very fine julienne. Heat the olive oil in a saucepan and add the onions along with the salt, sugar, ground pepper and bay leaf. Caramelize the onions, deglazing as necessary with red wine. When they are caramelized and very dark, remove the bay leaf and transfer to the bowl of a food processor. Add the red wine vinegar and process well. Serve with the duck croquetas.
