INGREDIENTS

Dough

• 2kg of wheat flour;

• 1l of milk;

• Salt and pepper to taste;

• 1 tablespoon garlic;

• 2 tablespoons olive oil;

• 1/2 tablespoon butter;


For the stuffing

• 1 kg of cooked duck, already shredded;

• 1/2 chopped onion;

• 1 chicory leaf;

• 3 basil leaves;

• 2 chopped garlic cloves;

• 200g cooked jambu;

• 1/2 chopped bell bell pepper;

• 50 ml of tucupi;

• Chives and chopped greens to taste;


PREPARATION METHOD

Put the ingredients for the pasta in the pan over a low heat, except for the wheat. When it's boiling, add the wheat to the pan, but little by little so that it doesn't blister. Stir constantly until it releases from the bottom of the pan. Once the dough is warm, knead it until it is uniform. Set aside.

The next step is to season the duck. Add all the ingredients, including the jambu. Now all you have to do is shape the drumsticks and fry them. When they're golden brown, serve them hot.
