INGREDIENTS

4 VG duck thighs and drumsticks

• 4 garlic cloves (with skin)

• Enough duck or pork fat to cover the thighs and drumsticks (approximately 1kg)

• Fresh sprigs of sage, rosemary, thyme and bay leaf

• White pepper

• Salt


PREPARATION METHOD

Make a circular cut in the hamstring. Salt the product, add the herbs and pepper. Leave to rest for at least 6 hours. Place the thighs in a pan with the herbs and garlic. Place the pan on a low heat and cook for about 6 hours, until the thighs are tender but not falling apart. 

Remove and store in a container covered with the fat in the fridge or freezer. When using, remove the excess fat, place on a baking sheet and bake for 30 minutes or until crispy. Remove from the oven and serve. Serve with mashed tea.
