ROAST RABBIT LACQUERED WITH HONEY AND MUSTARD

INGREDIENTS

1 rabbit

• 2 English potatoes

• 2 potatoes

• 1 sprig of rosemary

• 250g butter

• 1 medium onion

• 1 head of garlic

• 2 tbsp dijon mustard

• 1 tbsp honey

• Salt and pepper to taste


PREPARATION METHOD

Start by cutting up the potatoes and cooking them in salted water for about 15 minutes.

Meanwhile, chop the onion and garlic and cut the rabbit into pieces. In a bowl, mix the honey and mustard and set aside.

Place the cooked potatoes on a platter with the onions, chopped garlic cloves, rosemary leaves and pieces of butter. Place the rabbit pieces on top. Brush the meat with the mustard and honey mixture and season with salt.

Bake in a preheated oven at 200ºC for 20 to 30 minutes. When golden brown, remove from the oven, finish with olive oil and black pepper and serve immediately.
