INGREDIENTS

Villa Germânia quail

• Brazil nuts

• Garlic

• Parsley

• 1 loaf of bread

• 2 tbsp Dijon mustard

• Salt

• Black pepper

• Thyme

• Bacon

• Parmesan cheese


PREPARATION METHOD

Carefully debone the quails and set aside. Use a pestle to pound the Brazil nuts until they are very small. Add the garlic and mash. Then add the parsley and pieces of bread and repeat the same process.

Pour everything into a bowl and add two teaspoons of Dijion mustard and mix. Season with a good pinch of salt and black pepper to taste. Finish with a few thyme leaves and set aside.

Line up the slices of bacon on a piece of plastic wrap. Place the reserved quail meat on top, season with salt and pepper. Spread the paste made in the mortar over the meat. Grate the Parmesan cheese over the mixture and roll it up. Tie some string around the contents, place in the pan and bake for about 20 minutes at 200°.
