INGREDIENTS

• 100g bigoli

50g smoked duck breast

• 2 duck egg yolks

• 50g grana padano

• 50g pecorino

• Salt

• Black pepper

PREPARATION METHOD

Cut the duck into small cubes, then place in a frying pan over a low heat until crispy. During this time, soak the pasta in water for about 6-7 minutes until it is al dente. Put the egg, salt, pecorino, grana padano and pepper in a bowl and mix. When the pasta is ready, add it to the bowl and mix. 

If necessary, add a little cooking water to help the pasta become creamier. To finish, assemble the pasta on the plate and add more pecorino and pepper on top.
