BREADED DUCK DUMPLING IN TUCUPI

INGREDIENTS

4 - pieces of Duck Drumsticks and Thigh 

• 500g - Cassava

• 500ml - Olive Oil 

• ½ - unit chopped onion 

• 2 - cloves Garlic

• 2 - units of tomatoes

• 200g - Piracui Flour 

• 1L - Tucupi

• 3 - units of eggs

• 300g - Tapioca Flour

• 800ml - Soybean Oil 


PREPARATION METHOD

Put the duck in the pressure cooker with the tucupi until it is tender.

Cook the cassava and sieve it to make a puree.

Heat the oil in a hot pan and sauté the onion, garlic and the shredded duck. Add the tomato and piracui flour. Sauté a little more and wait for it to cool. Add the manioc puree to make a firm paste. Season with salt and pepper.

Shape the dumplings and dip in the beaten egg with salt and pepper, then roll in the tapioca flour and fry in the hot oil until golden brown.
