INGREDIENTS

600g duck fillet;

3 onions;

5 cloves of garlic;

8 chili peppers;

50g Jambo;

Coloral to taste;

Black pepper

Salt to taste;

10 Bananas pacova;

10 Oranges;

2 glasses of dry white wine;

1 spoonful of margarine;

Tucupi with chili pepper;

20g chopped jambo.


PREPARATION METHOD

The duck fillet

Bake the fillet for 120 minutes, cover the tray with aluminum foil. Boil 50g of jambo with water for 15 minutes. Shred the fillet and sauté with a chopped onion, four cloves of chopped garlic, eight chili peppers, coloral, black pepper and salt and the jambu cut into small pieces.

The orange syrup

Squeeze 10 oranges into a container, add an onion and a clove of chopped garlic, two glasses of dry white wine and boil until it reaches the consistency of syrup.


The banana

Cut ten pacovas bananas into slices, cook for 20 minutes, then mash the cooked slices and fry.


Serve

Cover the banana slices with the shredded duck and drizzle with the orange syrup. Tucupi to taste. Garnish with chopped and fried jambo.
