COD WITH A REFRESHING CUCUMBER SALAD

INGREDIENTS

600g desalted cod loin cut into pieces

• 1 lemon

• 1 Japanese cucumber

• 1 large onion

• 3 cloves of garlic

• 1 and 1/2 tablespoons vinegar

• 6 tablespoons of olive oil

• Salt, pepper and a pinch of sugar


PREPARATION METHOD

Put the cod in a saucepan and boil for 10 minutes. Then remove the cod from the water. In another pan, add olive oil, half an onion and chopped garlic. Fry until the onion is transparent. Add the cooked cod and sauté for 4 minutes. 


Salad

Wash and slice the cucumber into thin slices. Dice half the onion. Mix the chopped cucumber and onion, vinegar, a pinch of sugar, salt and olive oil in a bowl.
