DUCK GIZZARD APPETIZER

INGREDIENTS

1kg duck gizzards 

• 3 chopped garlic cloves

• 1 drizzle of olive oil

• 2 bay leaves

• 200g crushed tomatoes

• 300ml white wine

• 1 chicken stock cube

• Chili sauce

• 1 pinch of white pepper

• Salt

PREPARATION METHOD

Start by cleaning the gizzards and removing the skin and fat. Cut the gizzards into medium-sized pieces and set aside. 

Heat the olive oil and add the chopped onion and garlic cloves. Allow to soften and add the bay leaves and tomatoes. Leave to simmer for five minutes, remove the bay leaves and set aside, then pass the sauce through a hand blender. Bring it to the boil, add the gizzards, bay leaves and season with a little salt, pepper, chicken stock and chili sauce. Pour in the white wine, let it evaporate and cook for another 5 minutes. 

Add water to cover the gizzards, reduce the heat to medium, cover and simmer for 30 minutes. Adjust the seasoning, add more water if necessary and cook until the gizzards are very tender. Serve hot with the bread of the day.
