INGREDIENTS

300g VG duck sausage

• 500g Tapioca

• 1 cup water

• 2 tablespoons olive oil

• 1 chopped onion

• 2 chopped tomatoes

• Salt to taste.


PREPARATION METHOD

Place 2 to 2 1/2 tablespoons of tapioca in a medium non-stick frying pan. Spread gently until it forms a pancake. Over a low heat (160ºC), brown for 2 minutes and then turn the tapioca over and leave it for another 1 minute.

For the filling, heat the olive oil and brown the onion. Add the tomato and the duck sausage cut into pieces. Sauté for 3 minutes. Fill the tapioca, fold over and serve.
