INGREDIENTS

1.2kg Villa Germania Desalted Cod Loin 

• 400g potato balls

• 300g tomatoes

• 12 small onions

• 6 whole garlic cloves

• 6 sprigs of fresh thyme

• 4 sprigs of fresh rosemary

• 1.5L extra virgin olive oil 

• Salt and pepper to taste


PREPARATION METHOD

Pour all the olive oil into a baking dish, add the garlic cloves, potatoes, onion, tomatoes, rosemary sprigs, thyme and the loin, which should be completely covered in oil. 

Place in a low oven (maximum 100ºC). Don't let it boil. If you notice that it is starting to boil, turn the oven off and then on again. Leave to cook for about 1 hour and 30 minutes. 

Once the time has elapsed, remove the cod loin from the oven and place it on a platter. If necessary, correct the salt and pepper and drizzle with plenty of olive oil. 

Serve with the potatoes, onions and roasted tomatoes and garnish with rosemary.
