02 VILLA GERMANIA DUCK BREASTS

• 02 cups cherry tomatoes

• 06 tablespoons olive oil

• 01 tablespoon fresh oregano

• 04 sliced garlic cloves

• 1/2 onion diced

• 200g fresh tomato sauce

• Chopped chives

• Salt and sugar to taste

PREPARATION METHOD

Sauce: In a pan with olive oil, brown the sliced garlic and onion. Once browned, add the tomato sauce. Season with salt and sugar, mixing well. Turn off the heat and add the cherry tomatoes, fresh oregano, and chives. Duck: Remove the duck breast from the refrigerator 10 minutes before cooking. Using a sharp knife, score the skin in a crosshatch pattern, being careful not to cut into the meat. Season the meat with fine salt and white pepper.

Heat a skillet over high heat. Sear the duck breast skin-side down until lightly browned. After 7 minutes, turn the meat over and cook for another 5 minutes. Remove excess fat from the pan, reduce to medium heat, and sear for another 2 to 3 minutes on each side. Duck breast is best served medium-rare, still pink inside and well browned on the outside.
