INGREDIENTS

1 cleaned teal with giblets (heart, gizzard and liver)

• 1 lemon

• 1 medium onion

• 3 French rolls

• 1/3 cup water

• 1 tablespoon chopped parsley

• 1 tablespoon chopped chives


PREPARATION METHOD

Season the teal with salt, lemon and black pepper. Grind the giblets together with the breadcrumbs softened in the water, season with salt, parsley and chives and onion. Mix the ingredients well and stuff the teal with this mixture. Bake in a moderate oven (180ºC).

Roast the teal breast-side up in a deep roasting pan (iron or aluminum). Add 1/2 cup of water. When browned, remove the liquid that has formed in the pan. Add 1/2 cup of water. Drizzle over the teal with the sauce that has formed so that it browns well.
