INGREDIENTS

1 duck (3 kg)

• 4 cloves of garlic, minced

• 1 bunch of green smell

• 1 finely chopped onion

• 1 cup dry white wine

• 2 tablespoons butter or margarine

• Salt and pepper


PREPARATION METHOD

Marinate the duck in the wine with salt, pepper, garlic and onion for 12 hours.

Put the duck in the pressure cooker, along with the marinade and the green peppercorns. Add water and cook until the meat is tender (open the pot after half an hour to check the doneness and add more water if necessary).

Arrange the duck with the rest of the cooking stock on a baking sheet and spread with butter or margarine. Bake in a hot oven until golden brown. Serve with white rice.
