INGREDIENTS

1 whole duck; 

• Parsley to taste;

• Cassava flour to taste;

• Lemon juice to taste;

• Garlic to taste;

• Chopped onion to taste;

• Olive oil to taste;

• Salt and pepper to taste.


PREPARATION METHOD

Wash the duck and season with the lemon juice, onion, parsley, garlic, salt and pepper. Leave to soak for 24 hours. Fry the duck in a pan previously heated with olive oil, gradually adding a tablespoon of water. Leave to cook with the lid closed, turning the duck from time to time. 

When it's ready, place the whole duck on a platter. In the same pan in which you fried the duck, add the manioc flour to make a farofa and pour it around the duck. Serve immediately.
