INGREDIENTS

01 VG seasoned duck

• 01 teaspoon finely chopped fresh rosemary

• 01 teaspoon fresh sage finely chopped

• 2/3 cup duck or chicken liver, finely chopped 

• Salt and freshly ground pepper


PREPARATION METHOD

Mix the rosemary, sage and pepper. Place the chopped liver in this spice mixture, add the salt and mix until smooth. Place this mixture inside the duck and close the cavity. Roast the duck breast-side up in a deep roasting pan, adding half a glass of water. When browned, remove the liquid that has formed in the pan and add another half a glass of water. 

Drizzle the duck with the sauce that has formed so that it is well browned and crispy. Remove the duck from the oven. Open the cavity and remove the liquid along with the liver. Transfer this liquid to a saucepan, add 1/4 cup of the roasting sauce and bring to the boil over low heat to reduce a little, until it forms a consistent sauce.

PAIRING

Serve with piamontese rice and rocket salad.
