STEWED DUCK GIZZARDS

INGREDIENTS

500g VG duck gizzards

2 cups water

1/2 cup vinegar

4 garlic cloves

2 chopped onions

1 tablespoon mint leaves

1 tablespoon bay leaves

1 can of peeled tomatoes

50g bacon

1/3 cup olive oil

1 tablespoon salt

1 tablespoon chopped parsley



PREPARATION METHOD

Mix the water and vinegar in a bowl. Soak the gizzards in this solution for 5 minutes. Drain and set aside. In a blender, blend the garlic, onion, mint, bay leaf and tomato. In a pressure cooker, over medium heat, sauté the chopped bacon with the olive oil. When the bacon has browned, add the gizzards and the ingredients blended in a blender. Season with salt, cover the pot and cook for 20 minutes after the pressure starts. Let off the pressure, open the pan and place on a platter. Sprinkle with parsley and serve.
