INGREDIENTS

01 gran duke VG

• 06 apples

• 02 glasses of water

• 01 tablespoon cinnamon

• Salt and pepper to taste

• Water for drizzling


PREPARATION METHOD

Defrost the Gran Duke in the fridge for 12 hours. Remove the giblets and season with salt and pepper. Roast it breast-side up in a deep roasting pan, adding half a glass of water. When browned, remove the liquid that has formed in the pan and add another half a glass of water. Drizzle the Gran Duke with the sauce that has formed so that it is well browned. Remove from the oven and wait about 10 minutes before slicing.


Apple puree

Peel the apples, remove the seeds and roughly chop them. Cook them in salted water for 15 minutes. Remove from the heat and blend in a blender. Bring back to the boil. Serve with apple slices and cinnamon powder.
