INGREDIENTS

Duck breast fillet

• Freshly ground pepper

• Salt to taste

• Various vegetables (carrots, potatoes, broccoli, etc.)



PREPARATION METHOD

Preheat the oven to 180º. Make transverse cuts in the skin of the breast and season with ground pepper and salt. Fry for 10 minutes skin side down (without oil), over low heat - protect from splashes. After the indicated time, turn the fillet over - the skin should be crispy - and fry for another 2 minutes. In the oven dish, skin side down, cook for another 10 minutes. Remove from the oven, wrap in aluminum foil, let stand 5 minutes and serve.


CHEF'S ADVICE

If the cut is skinless, fry each side for 5 minutes.

Duck fat is considered one of the healthiest fats and can be used instead of butter to prepare sautéed vegetables.
