INGREDIENTS

01 package of VG duck wings

• 8 chopped garlic cloves

• Small thyme

• 2 chili flakes

• 1 lemon, squeezed

• 1 tablespoon brown sugar

• 40g sea salt

• 1l rapeseed oil

• 2 tablespoons garlic salt

• 1 tablespoon thyme leaves

• 1 teaspoon cayenne pepper


PREPARATION METHOD

Place the marinade ingredients in a large plastic bag and shake until well mixed. Place the duck wings in the bag and rub until they are completely covered. Seal and refrigerate for at least 8 hours. When the wings are marinated, preheat the gas oven to 150 °C.

Remove the wings from the marinade, cleaning as much as possible. Place the wings in a large, deep baking dish and pour over the oil so that the wings are completely covered. Cover with aluminum foil and bake for two and a half hours. Once the wings are cooked, remove from the oil and drain well with a sponge. Preheat the grill to medium and grill the wings for 5-10 minutes, turning occasionally until crispy and golden. Meanwhile, combine the seasoning in a large bowl. Serve in a bowl with the wings.
