DUCK IN BLACK BEER

INGREDIENTS

One medium duck (about 2 kilos)

• Two to three long-necks of black stout. 

• Three medium red onions

• 250 ml of olive oil

• Black peppercorns

• Salt


PREPARATION METHOD

Divide each onion into four parts, starting from the top towards the root. Cut each part in half horizontally and then release all the petals; In a stone pan, arrange all the onion covering the bottom; Cut the duck into pieces and place on top of the onion, making sure that no piece is on top of another; Using a pepper grinder, sprinkle black pepper to taste over the duck. Pour in the olive oil, spreading it all over the pan;

Turn the heat up to high and cook, covered, for about 30 minutes. Do not stir during this stage; Add the black beer until the duck is completely covered and leave the flame on high until it starts to boil. Do not stir during this stage; Lower the flame to minimum and cook for approximately 1 hour and 30 minutes, until the beer is reduced to 1/3. Do not stir during this stage.
