DUCK CUBES WITH RED CABBAGE AND MASHED POTATOES

INGREDIENTS

500g diced duck breast 

• 50ml soy sauce 

• 2 medium onions in strips

• 1kg English potatoes

• 1 red cabbage cut into strips  

• 1 tablespoon sugar

• 200ml dry red wine

• 50ml red wine vinegar

• Parsley to taste

• Salt and pepper to taste


PREPARATION METHOD

Cook the potatoes with salt until they are soft, drain and squeeze into a mashed potato and set aside. Season the meat with salt and pepper. 

In a large frying pan, add the oil and brown the meat over a high heat so that it doesn't add juice, about 5 minutes. Add the onion and meat, cook for 3 minutes and add the shoyo sauce, cook for another 2 minutes. For the red cabbage, mix the cabbage, sugar, wine, vinegar and a pinch of salt. Put them in a saucepan. After boiling, leave on a low heat for 40 minutes, until well cooked and moist.
