DUCK FILLET SKEWER WITH TOMATO

INGREDIENTS

500g VG duck fillet

• 200g cherry tomatoes

• 1 clove of garlic

• 1 chopped onion

• Juice of 1 orange

• 4 tablespoons olive oil

• Parsley, chives salt and pepper to taste

 

PREPARATION METHOD

Cut the fillet into pieces and season with garlic, onion, parsley, chives, orange juice, olive oil, salt and pepper. Leave to rest in the fridge for 30 minutes. Assemble the skewers by alternating the meat and the tomatoes. Place on the grill. If baking in the oven, preheat to 200ºC and bake for 15 minutes.
