INGREDIENTS

• Lard

• Garlic vine

• Ground pepper

• 2 chopped onions

• Breadcrumbs

1 young duck

• 4 carrots

• Olive sauce

• 3 chopped tomatoes

• Salt

• Garlic

• 2 tablespoons vinegar

• 2 beaten eggs


PREPARATION METHOD

Clean the duck and leave it in the garlic vine. Cook in the required amount of water. When it comes to the boil, add the tomatoes, onions and carrots. Crush a clove of garlic with salt, add a pinch of black pepper, ½ chopped chili pepper and vinegar. Mix everything well and add the slices of meat, leaving them for a few minutes to taste.

Next, coat the pieces of meat in beaten eggs and then in breadcrumbs. Fry the pieces of meat in the hot lard, letting them brown on both sides, then remove. Serve plain or with olive sauce.
