VILLA GERMANIA DUCK RICE

INGREDIENTS

1kg of duck in pieces.

• 200ml dry red wine.

• 1 red onion, finely chopped.

• 50ml olive oil.

• 400g parboiled rice.

• 200g thinly sliced chorizo sausage.

• 1.5 liters of vegetable stock.

• Fresh spices (rosemary, bay leaf, thyme and parsley)

• Salt and pepper.

• Grated cheese


PREPARATION METHOD

Season the duck pieces in advance (4 hours) with salt, pepper and fresh spices. Sauté the duck pieces in an iron pan with the marinade, onion and olive oil for 20 minutes. Then add the vegetable stock and wine. Leave to cook until the meat is soft and loosens from the bone. About an hour after cooking, remove the meat from the stock and shred it, discarding the skin. Return the shredded meat to the stock and bring to the boil.

Add the rice and cook to al dente.

Sauté the slices of chorizo in a frying pan. Serve the creamy rice with the slices of chorizo, grated cheese and parsley.
